INGREDIENTS

  • 1-pint cherry or grape tomatoes sliced in half
  • 1 pound of strawberries diced into quarters
  • 1 shallot diced
  • ½ lemon juiced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

INSTRUCTIONS

  • Add all of the ingredients to a medium-sized bowl. Mix ingredients together using a large spoon, being gentle not to squish the strawberries or tomatoes.
  • Serve the salad on its own or as a side dish. Enjoy!
