INGREDIENTS
- 1-pint cherry or grape tomatoes sliced in half
- 1 pound of strawberries diced into quarters
- 1 shallot diced
- ½ lemon juiced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley chopped
INSTRUCTIONS
- Add all of the ingredients to a medium-sized bowl. Mix ingredients together using a large spoon, being gentle not to squish the strawberries or tomatoes.
- Serve the salad on its own or as a side dish. Enjoy!
