3 c chopped cucumber
3 c chopped tomato
1/4 c diced red onion
Dressing
1 tsp salt
1/2 tsp pepper
1/4 c white vinegar
1/4 c avocado oil
1/2 tbsp powdered stevia
In a bowl, mix tomato, onion, and cucumber and set aside.
In a small bowl mix all dressing Ingredients. Pour over the cucumber mixture. Mix well and refrigerate.
